Pick Rubber if lightning is what keeps beating you. Its passive makes you immune to guns and to most Electric and Lightning attacks, which turns matchups against Lightning users on their head. The immunity is not total: the Thunder God boss still damages you, and the Skull Guitar's ability and one of Lightning's moves can still stun you.

The rest of the kit is stretch attacks plus a [V] Transformation that makes your attacks instant. All moves are AoE, damage is decent to high, stuns are good and end-lag is low. The fruit was called Gum until its Update 17.3 rework.

It is harder to grind with than you might expect. Every attack except [C] has a lot of knockback, the moves cost Energy, and none of them break Instinct. Hitboxes are extremely small, startup is high on several moves, and some must be held for full damage, so you end up fighting at close range. Movement is great if there is a surface or an NPC to launch off, and poor across open areas.

We would call Rubber a counter pick with a fun transformation rather than an all-rounder.
